2 large avocados
1 tomato, diced
1/2 to 1 jalapeño, finely chopped
2 tbsp onion, finely chopped
1 clove garlic, minced
Juice of half a lime, about 1 tbsp
Salt, to taste
4 boneless chicken breasts
Olive oil
Creole seasoning
Pepper Jack cheese, sliced
- Make guacamole with avocados, tomato, jalapeño, onion, garlic, lime juice and salt. Chill for a couple of hours to allow the flavours to blend.
- Coat chicken with a little olive oil and creole seasoning; grill.
- Place grilled chicken in a baking dish and cover with guacamole and cheese slices.
- Broil a few minutes until cheese is melted and guacamole is warm.
